Recipe: Lemon Balm Bundt Cakes

Ingredients

  • 1 ½ c flour
  • 1 ¼ tsp baking soda
  • 1 cup sugar
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 1 tsp lemon extract
  • ½ cup butter
  • ½ cup buttermilk
  • ¼ c finely chopped lemon balm
  • 2 eggs

Instructions

  1. Mix dry ingredients together.
  2. Cream butter with sugar. Add lemon balm.
  3. Beat in eggs one at a time, add vanilla and lemon extracts.
  4. Alternate adding dry ingredients with butter milk.
  5. Pour into a greased and floured mini bundt pan (6 cups total)
  6. Bake 350 degrees for 30 – 35 minutes. Allow to cool 10 minutes before removing from pans.
  7. Sprinkle with powdered sugar, or mix powdered sugar with 1 tbs lemon juice and drizzle glaze over cakes
